Peas and Rice Provençale

It seems every country has their own variation of the “peas & rice” dish. This Blue Zones® variation livens the tastebuds with pimento strips, and really shines when buttery, briny halkidiki olives are used.

Ingredients

  • ¼ cup chopped onion
  • 4 T olive oil
  • ½ clove garlic, finely chopped
  • ½ cup sliced green olives
  • 2 cups cooked peas
  • 2 cups hot cooked brown rice
  • Pimento strips
  • ¼ cup chopped parsley

Directions

  1. Sauté onion in oil until tender, about 10 minutes; add garlic and olives and cook 1 minute longer.
  2. Combine with peas and rice; toss gently.
  3. Garnish with pimento strips and parsley.
